These dumplings filled with lemon curd filling will be everyone's favorite. In fact, you can even use the basic dough for plum or peach dumplings! :)

The first step in Joey’s sandwich is to make the meatballs by mixing the ground meat with the spices, egg, breadcrumbs, and finely chopped red onion. Let it sit for 10 minutes, then shape it into nine equal balls and fry them in a pan over medium heat in oil, then remove.
For the sauce, add the chopped carrots, celery and onion to the same pan, then start to sauté, season with salt, pepper and sprinkle with oregano. Pour over the passata and water, sprinkle with parmesan and once it boils, add the meatballs and cook, covered, for 20 minutes. Tear the mozzarella over the top, leave covered for 3-4 minutes to melt the cheese, and fill the halved baguettes.
