These dumplings filled with lemon curd filling will be everyone's favorite. In fact, you can even use the basic dough for plum or peach dumplings! :)

The first step in making a pulled pork sandwich is to shred the pork. Heat oil in a pan and add the meat. Brown over high heat for 2-3 minutes, then remove to a bowl. Add the BBQ sauce and mix. (You can play with the amount of sauce to see how juicy you want the end result.) 

Cut the onion into thin slices, salt, sugar, add the vinegar and grated lime zest, then mix and set aside for 10 minutes. Halve the rolls, place a leaf of lettuce on the bottom, then a large portion of meat and purple onion, sprinkle with grated cheese and season further with finely chopped chives, then place the top of the rolls on top.
